 Raw Kopi Luwak or Raw Civet Coffee which is produced mainly on the islands of Indonesian Archipelago such Sumatra, Java, Bali and Sulawesi (Celebes).  Moreover is one of the most unique, expensive and low-production varieties of coffee in the world.  Due to its popularity, it is also now available in Philippines, Vietnam and East Timor.

The Asian Palm Civet ( Paradoxurus hermaphroditus ) which eats the beans of coffee berries (red colour) and passed through these animal digestive tract likewise the stomach and intestines;  the proteolytic enzymes making shorter peptides and more free amino acids.  After the undergoes chemical treatments and fermentations, the beans are then defecated and keeping its original shape.  The still-intact beans are collected from the forest floor.  Then the beans will go through process of cleaning, drying , light roasting and brewing which gives the coffee an aromatic taste with much less bitterness and makes the quality most expensive.  It has a rich, heavy flavour with hints of caramel or chocolate.
