1. Introduction:
Fumaric acid, or trans-butenedioic acid, is the chemical compound with the formula HO2CCH=CHCO2H. This white crystalline compound is one of two isomeric unsaturated dicarboxylic acids, the other being maleic acid, wherein the carboxylic acid groups are cis * Fumaric acid, has a fruit-like taste. The salts and esters of fumaric acid are known as fumarates.
Fumaric acid, when added to food products, is an acidity regulator denoted by E number E297.
2 Properties:
White odorless powder or, with special sourness that is as strong as 1.5 times of citric acid.
Fumaric acid is soluble in ethanol (5.76g/100g,30°c), slightly soluble in water (0.63g/100ml,25°c) and in ether, and very slightly soluble in chloroform.
Fumaric acid has no hygroscopicity, and will sublime at 200°c. Boiling point: 290°c (decompose).
Fumaric acid will turn to maleic anhydride at 230°c, and will generate DL-malic acid if boiled with water.
3 Usages:
1). Fumaric acid is used as a flavoring, because it is the sourest tasting of the organic acids. Three parts of fumaric acid are as sour as five parts of citric acid.
2). Fumaric acid is also used as an anti-oxidant, as a mordant (a substance that helps dyes stick to fabric), and as a buffering agent (helps maintain a particular acidity or alkalinity).
3). Fumaric acid is used to lower the pH (make something more acid, and thus taste more sour). This helps certain anti-microbial agents such as and work better. Fumaric acid itself kills bacteria also.
4). Fumaric acid breaks the sulfur-to-sulfur bonds in the elastic protein gluten in bread doughs. This makes the doughs more machineable. It also is uses in rye and sourdough breads to make them more sour.
5). Fumaric acid is used in combination with to create delayed action leavening agents (something that produces carbin dioxide gas to make breads rise). Since it only dissolves in warm water, the leavening action is delayed until the bread starts to bake.
6). Fumaric acid is also used in manufacturing unsaturated polyester resin.
