The hydrolysis (coffee extract made of soluble solids plus water) is frozen at a temperature of 50oC below zero, then ground and sorted by size, to be taken to the drying chambers. In the drying chambers, under extreme vacuum conditions, the humidity is extracted from the frozen extract by sublimation, a physical property by which the water is converted from solid to gas without going through the liquid phase.
